Ingredients:
- 1 large sweet potato, peeled and chopped
- 1 head of broccoli, chopped
- 2 salmon fillets
- 2 tbsp olive oil
- 1 tbsp lemon pepper
- Salt and pepper, to taste
Instructions:
- Preheat your grill to medium-high heat.
- Toss the sweet potato and broccoli with 1 tbsp olive oil, salt, and pepper, then place on a grill pan and cook for 10-15 minutes, or until tender.
- Rub the salmon fillets with the remaining olive oil, lemon pepper, then grill for 5-7 minutes on each side, or until cooked through.
